Easiest one pan shrimp fajitas for dinner over here tonight!
For the veggies…
-1 red bell pepper, sliced
-1 green bell pepper, sliced
-1 yellow bell pepper, sliced
-1 small white onion, sliced
-sea salt
-black pepper
Slice the veggies & then sauté in a hot cast iron with avocado oil for about 5-7 min!
For the shrimp…
-1 lb shrimp (peeled & deveined)
-1 tsp sea salt
-1 tsp chili powder
-1 tsp turmeric
-1 tsp onion powder
-1 tsp cumin
-1/2 tsp garlic powder
-1/4 tsp black pepper
You can remove the peppers & set aside or leave them in the pan & add in the shrimp. Cook for about 4 min or until shrimp is done! Sprinkle with cilantro and serve with tortillas and anything else you like: we did avocado, salsa, cheese & hot sauce.
