Blackened Fish:
-1 lb tilapia
-1 tsp paprika
-1 tsp oregano
-1 tsp garlic powder
-1 tsp coriander
-1/2 tsp cumin
-dash of cayenne
-sea salt, to taste
-avocado oil
Directions:
-Mix all the spices together & coat both sides of fish.
-Heat cast iron skillet at medium-high heat, once hot, add in avocado oil.
-Lay fish in skillet (should sizzle), let cook/blacken for about 2-4 min on each side.
Avocado Cilantro Sauce:
-1 avocado
-1/2 cup plain greek yogurt
-1/2-3/4 cup cilantro (depending on your preference)
-1 lime, juiced
-1/2 -1 jalapeno (depending how much spice you like)
-sea salt, to taste
Directions: In a food processor (or blender), combine all ingredients. Taste test with some chips to make sure everything is to your liking!
Cabbage Slaw:
-1/2 red or green cabbage (used green here but prefer red)
-handful cilantro
-1/4- 1/2 red onion (optional)
-1 lime, juiced
-sea salt, to taste
Directions: Throw everything in a bowl and let the flavors come together! Better the longer it sits!
Final: Assemble tortillas of choice, top with avocado cilantro sauce, then add fish, and cabbage. Serve with chips, salsa, and margaritas and you’re good to go!
