This recipe comes from my girl @dani_nemeh, check out her page for the original recipe! They’re delicious!
-1 bag granola (I used purely elizabeth original granola)
-1/3 cup ghee
-1.5 cups cashews (soaked for at least 3 hours)
-3/4 cup blueberries
-1/3 cup coconut oil (melted)
-1/3 cup maple syrup
-1 lemon (juiced)
-1 tbsp vanilla extract
Using a food processor, process whole bag of granola with melted ghee. Line an 8×8 pan with parchment paper and pour and press crust into bottom of the pan. Then blend up rest of the ingredients for the cheesecake (either in a blender or the cleaned out food processor. Pour the cheesecake part over the crust. Smooth out and freeze for at least 3 hours. Then store in fridge or freezer, but make sure to thaw for 10-15 min if you keep them in the freezer! Enjoy!
