I love ALL things gingerbread, and these balls can be enjoyed for breakfast, lunch, a snack, whatever you want! They’re super easy too, like REALLY easy and minimal ingredients!
-1 cup dates (soaked in hot water for about 3 min, only need to do this if they’re hard)
-1 cup walnuts, or nut of choice (soaked in water for 2-4 hours, helps digest the nuts better)
-1 tbsp molasses
-1 tsp cinnamon
-1 tsp ginger
-1/4 tsp cloves
-1/4 tsp nutme
-1/4 tsp sea salt
-chocolate of choice for drizzling
-a mixture of coconut sugar & cinnamon for rolling
Process the walnuts & dates in the food processor. Add in everything else & put it in the fridge for an hour or so to harden up. Roll into balls. Drizzle or roll! Then store in the freezer. They’re squishy so you don’t even need to thaw them. Enjoy!
