Easy & the perfect warm meal to top off the night!
Ingredients:
-1 lb grassfed ground beef
-1 28oz can diced tomatoes + 2 cans kidney beans
-1 can 4oz green chilis
-1 cup chicken broth
-1 large onion
-2 green bell peppers
-5 garlic cloves
-2 tbsp chili powder
-1 tbsp dried oregano
-1 tbsp cumin seeds (you can use powdered)
-1 tsp paprika
-1 dried bay leaf
-olive oil
-sea salt & black pepper, to taste
Directions:
Toast cumin seeds in olive oil for a min or so. (If using powdered, add in when add other spices) then add in the garlic, onion & green bell peppers. Season with salt & pepper. Let those cook down and soften a bit. Add in the beef, season with more sea salt salt & add in the chili powder and oregano and cook beef through. Throw in the diced tomatoes, green chilis, and bay leaf. Bring it to a simmer & then add the broth, kidney beans, and more salt & pepper. Cook, uncovered for about 45-55 min on medium low & serve! Favorite toppings include: shredded cheddar cheese + cilantro + sour cream or greek yogurt.
