Easiest meal prep bowl ever! The flavors go so well together & you can eat it so many different ways!
-Arugula or green of choice
-1 lb chicken, cubed
-2 sweet potatoes, diced
-homemade cajun seasoning (2 tsp sea salt + 2 tsp garlic powder + 2 1/2 tsp paprika + 1 tsp black pepper + 1 tsp onion powder + 1 1/4 tsp dried thyme + 1 1/4 tsp dried oregano + 1/2 tsp red pepper flakes)
-sea salt + black pepper
Preheat oven to 425 degrees. Cubed chicken and cover with cajun seasoning and a drizzle of avocado oil. Keep in the fridge for about 30 min while you prep the potatoes. Dice sweet potatoes, cover in avocado oil + sea salt + black pepper. Roast sweet potatoes for 25-30 min. Shake when add the chicken. Add chicken to oven and roast for 12-15 min. Then it’s all done and assemble on a salad, pair with roasted veggies, or however you want! Hope you love it!
