This recipe is on of our fall go-to’s & it’s super simple! I could literally eat it everyday!
Ingredients:
-2 sweet vidalia onions
-1 jalapeño pepper
-8 oz canned green chilis
-4 garlic cloves
-32 oz chicken broth
-1 rotisserie chicken (shredded)
-2 cans cannellini beans (after rinsed & drained, take 1 cup of beans and blend with a little of the chicken broth to create a creamy blend)
-1 tbsp lime
-1 tbsp cumin
-1 tsp oregano
-1 tsp sea salt (more to taste)
-1 tsp black pepper
-1/2 tsp red chili flakes
-1/3 cup cilantro
Directions:
In a large pot, saute onions, jalapeño, green chili in olive oil until they soften (about 7 min). Add in chopped garlic & saute for a couple more min. Add in the chicken, chicken broth, cannellini beans (both whole & blended) lime juice, & all spices. Bring to a light boil for about 10 min. Add cilantro & taste test to see if you need more sea salt. Let cool & it’s ready to eat! Topping favorites: cheese + cilantro + tortilla chips. Hope you love it!
