I told Thomas I could eat this meal once a week because I loved it that much. Full of flavor and so much deliciousness. I highly suggest it 🙂
Ingredients:
-1 lb shrimp, peeled & deveined
-1 package spicy italian chicken sausage, chopped into circles
-3 bell peppers (we uses green, red, & yellow_
-1 zucchini, sliced & halved
-1/4 cup chicken stock (or broth)
-cajun seasoning (about 1/2 – 1 tbsp)
-sea salt, pepper, & garlic powder
-avocado oil (about 1 tbsp)
Directions:
Pat dry the shrimp with a paper towel and season generously with a cajun type/ old bay seasoning. We used Primal Palate’s New Bae seasoning. Heat pan nice and hot & add in avocado oil. Cook shrimp for about 3-5 minutes on each side until no longer pink.
Remove shrimp from pan. Add chopped bell peppers. Cook for about 5-7 mins till soft. Season with sea salt, pepper and garlic powder. Add zucchini and sliced sausage. Cook for another 4-5 mins over medium high heat until the zucchini is soft. Season throughout with salt and pepper to taste.
Then add the shrimp and mix around. Let cook together for 2 mins. Then add 1/4 cup chicken stock. Serve over rice or by itself! Whatever you prefer!
