Apple Pie Baked Oatmeal on the breakfast menu today! We are using up our yummy seasonal produce from @misfitsmarket for this recipe!
-3 cups quick oats (you can use rolled but I prefer the consistency of quick!)
-1 3/4 cup hemp milk (can sub with milk of choice)
-1/2 cup maple syrup (or honey)
-1/4 cup coconut oil, melted (or ghee or butter)
-1/4 cup full fat yogurt (or applesauce or mashed banana)
-1 tsp baking powder
-1 tsp vanilla extract
-1/2 tsp sea salt
-1/2 tsp cinnamon
-1/4 tsp nutmeg
-2-3 small apples, chopped (i used 3 @misfitsmarket green apples)
Preheat oven to 350 degrees. Melt coconut oil & let cool. Throw all wet ingredients in a bowl and mix. Add in the dry, except the apples. Then add in chopped apples. Pour into a greased pan (I used 11×7, but could also use 9×9). Bake for 35 minutes and check every 5 minutes after. Mine took 45 for the 11×7!
