I made this meal for dinner the other night, and it was a crowd pleaser. Both Thomas & T devoured it, and Thomas even complimented me on how good it was. That’s a big deal coming from the pasta pro himself! This meal covers all the bases in one: protein, carb, veggie & fat. That’s how I prefer my meals to be usually. It was super easy and LOADED with flavor. We had leftovers that also made for a great lunch the next day!
Ingredients:
-8oz organic whole wheat farfalle
-4 chicken sausages (12oz), chopped
-1 head of broccoli, chopped
-1/2 yellow onion, diced
-2oz sundried tomatoes, chopped
-2 cups spinach, chopped
-1/4 cup parmesan, shredded
-olive oil
-sea salt, pepper, garlic powder
Directions:
Heat a medium pot with water and salt, and cook the pasta per the directions. Meanwhile, in a large skillet, warm olive oil on medium high heat. Add in onion and broccoli, and season with salt, pepper, & garlic powder. Let the veggies cook down for about 5-7 min until they start to soften. Then, add in the chopped chicken sausage and let everything cook together for another 5-7 minutes.
Add the chopped sundried tomatoes, spinach & more olive oil if needed to the veggie/ chicken sausage mixture. Season with more salt & pepper if needed. Once the pasta is done cooking and drained, and the veggies are cooked to your liking, pour the pasta into the pan with the veggies. Before mixing everything together, add parmesan, salt, pepper, & a good drizzle of olive oil on top of the pasta. This helps the parmesan and seasoning stick to the pasta! Then, mix everything together until well incorporated & serve!
