I thought now would be a good time to make a baked oatmeal recipe with basically whatever you have in your pantry, but I’m calling it Trail Mix! Such an easy and delicious recipe to prep ahead and have all week! It makes a big batch, so perfect for feeding a big family or freezing some to have for later. You’ll thank yourself! I’ve included a list of literally all the substitutions if you need it depending on what you have at the bottom of the recipe! Can’t wait to hear what you all think with this one!
-3 cups quick oats (can use rolled oats, but I prefer the texture of the quick oats in here)
-1 3/4 cup almond milk
-1/2 cup maple syrup
-1/2 cup plain greek yogurt
-1 tsp vanilla extract
-1 tsp cinnamon
-1 tsp baking powder
-1/4 tsp sea salt
-1/2 cup dried cranberries
-1/2 cup pecans, chopped
-1/2 cup shredded coconut
-1/2 cup chocolate chips
Heat over to 350 degrees. In a large mixing bowl, whisk the eggs together. Add in maple syrup, yogurt, almond milk, & vanilla extract. Once combined, pour in the oats, baking powder, cinnamon & sea salt. Mix until well combined. Fold in cranberries, pecans, coconut, and chocolate chips.
Bake for about 25-30 min in a 2 quart (11×7) dish baking dish coated in coconut oil! If you use a different size dish, just start checking it around 20 min & every 5 min from there until the middle is set! Makes about 6-8 servings depending on hunger level! Hope you enjoy! Store in the fridge and enjoy straight from the fridge, warmed in the microwave, or oven!
Oats– you can use rolled oats, but I much prefer the texture of the quick oats. If you don’t have them, you can always blend rolled oats from a minute or so to get that texture.
Almond milk– Any type of milk or if you’ve run out, you can blend water with almond butter or hemp seeds to make it homemade. If you google that, it’ll come up with so many options.
Maple syrup– You can of course use honey! Not sure what the measurements would look like with regular sugar or brown sugar but you could try.
Greek Yogurt– You could sub mashed banana, applesauce, or dairy free yogurt.
Dried cranberries- You can use raisins, chopped dates, chopped dried figs, apricots, anything you have.
Pecans– You can use literally any nut or seed like walnuts, cashews, peanuts, almonds, pumpkin seeds, etc.
Shredded coconut– You can just omit this if you don’t have it or like coconut.
Chocolate chips– You can use a chopped up bar of chocolate, cacao nibs, or omit.
