I am 100% an baked oatmeal lover. It has changed my life since becoming a mom. Having breakfast prepped and ready to go is always so helpful to me. Plus T usually loves them too, which makes my life way easier! I’ve been having so much fun making different flavors, and couldn’t resist my favorite combo AKA banana bread. If you make it, I hope you love it as much as we do!
-2 cups quick oats or rolled oats
-2 mashed bananas (about 1 cup)
-3/4 cup almond milk
-1/4 cup maple syrup
-1/4 cup full fat plain greek yogurt
-1 tsp vanilla extract
-1 tsp cinnamon
-1/2 tsp baking powder
-1/4 tsp sea salt
-1/2 cup add-in’s: pecans, walnuts, chocolate chips, whatever you want!
Preheat your oven to 350 degrees. Grease & line an 8×8 baking pan with parchment paper. In a large bowl, mash the banana. Then add in the milk, eggs, yogurt, maple syrup, and vanilla extract. Next, add in the oats, pecans (or whatever add-in), cinnamon, baking powder, and sea salt. Bake for 20-25 minutes until golden brown & cooked through in the middle! For serving: top with yogurt, bananas or fruit, nut butter or nuts, a drizzle of maple syrup, have fun with it!
A few notes that are always asked:
*As far as the oats, you can use both rolled or quick. I honestly prefer quick oats because I like the consistency more. This time, I didn’t have any, so I pulsed rolled oats in the food processor for a few min until they looked like quick oats & it worked perfectly. Not necessary, but that’s how I like it!
*Most things can be substituted if needed. For example:
-For the almond milk: you can use any or nut milk, soy milk, dairy milk, etc.
-For the eggs: you can substitute flax eggs.
-For the maple syrup: you can substitute with honey.
-For the greek yogurt: you can substitute dairy free yogurt or melted coconut oil.
