Dirty Chai Baked Oatmeal

This one is loaded with spice and everything nice! You can make it dirty by adding the coffee or just make regular chai by replacing the coffee with milk. The yogurt icing adds the best little topping, and makes it creamy & fabulous. Enjoy!

Ingredients:

-2 cups quick oats (or rolled oats)

-1 cup coconut milk (or milk of choice)

-1/2 cup strongly brewed coffee, espresso, or cold brew (cooled)

-1/3 cup plain greek yogurt

-1/3 cup maple syrup

-1 egg

-1 tsp baking powder

-2 tsp vanilla extract

-2 tsp cinnamon

-1 tsp ground ginger

-1 tsp cardamom

-1/2 tsp allspice

-1/2 tsp cloves

-1/4 tsp nutmeg

-1/2 tsp sea salt

Yogurt Topping:

-1/3 cup plain greek yogurt

-1-2 tbsp maple syrup (depending on how sweet you like it)

-dash of sea salt

*If you would like to make the recipe without coffee, just replace the coffee with equal amount of coconut milk or whatever milk you are using! So the total amount of milk would be 1 1/2 cups.*

Directions:

Preheat your oven to 350F degrees. In a large mixing bowl, whisk the egg. Add in the maple syrup, coconut milk, coffee (if you’re using it), greek yogurt and vanilla extract. Combine. Add in the dry of the dry ingredients and mix together with a spatula.

Coat an 8×8 pan with butter or oil. Pour your mixture into the pan and let it bake for 30-35 minutes until the middle is set but still soft! Let cool completely. In a small bowl, whisk together the yogurt topping and spread over the top once it’s completely cooled.

Store in an airtight container in the fridge for 3-4 days. If you’d like to freeze slices, you can either wait to add the yogurt topping and freeze in slices OR you can put the slices on a baking sheet in the freezer until the yogurt is frozen on top. Then individually wrap each slice and freeze in a ziploc bag.

To eat, either enjoy cold from the fridge (which I actually prefer) or you can warm it up! Just use whatever method you prefer: oven, microwave, toaster oven, up to you. You will probably want to add the yogurt AFTER warming!

  2. Just made this. If you like chai spices, make this! Made a couple of subs, using what I had-vanilla almond milk and greek yogurt so I decreased vanilla extract to 1 tsp. Added 1 tbsp ea/flaxseed meal and chia seeds (I almost always do this). Flavor was on point. Husband added more maple syrup-he likes his oatmeal really sweet 🙂 Another great recipe!!

     
  3. I made this today! I subbed (cooled) cinnamon dolce-flavored coffee, and vanilla Greek yogurt. I also didn’t have maple syrup so I just left it out. It turned out amazing! Thank you for sharing the recipe!
