made pumpkin chocolate chip muffins with my big boy on this rainy day🎃

we used @sallysbakeblog “whole wheat mini pumpkin muffins”, but made them into regular size💯

we made a mess in the kitchen, possibly measured incorrectly, ate lots of chocolate chips & it was just what our hearts needed after a week of bad colds & some challenging parenting moments! happy friday❤️

roasted broccoli & bell peppers (both covered in olive oil, sea salt, garlic powder & roasted at 375 degrees for 25-30 min) + crispy baked tofu (followed the @cookieandkate recipe & it’s fabulous & added salt, pepper, & garlic powder) + brown rice (bought a pack of frozen brown rice & all i did was warm it on the stovetop & it was perfect) + topped with @somethingnutritious maple tahini sauce (tahini, soy sauce, maple syrup, garlic powder, salt but the full recipe is on her blog under “maple tahini tofu” & it is SO GOOD!) + you could even drizzle on a little sriracha which i did a few times🙌🏻

just a little bit of the prep for an easy lunch & also super versatile depending on what you choose to top it with💯 but really so easy because i baked the veggies & tofu at the same time, warmed the rice while they were baking, & then let everything cool and put it into containers to have ready to throw in a bowl for lunch! also, was never a tofu person until this recipe, it always intimidated me but now i loveee how crispy and perfect it gets😍 happy thursday!

lunch most days looks like this🍳 i’m either eating eggs in some form, a snack plate, or leftovers if we have them!💁🏼‍♀️

this plate is filled with👉🏻 2 fried eggs in ghee + sea salt + an incredibly doughy, dense english muffin with avocado + microgreens💯
.
i honestly don’t remember what i did before this combo & that’s fine with me😎 i typically rotate through a lot of the same things for meals & there’s nothing wrong with that in my opinion. variety is good & helps us not get bored but sometimes just changing or adding a few different things to the same meal can spice it up!🙌🏻
.
i’m all about less decisions in my life right now because caring for little ones takes a lot of my brain capacity😜 so a lot of my meals look the same, but my creativity & fun comes in my baked goods. i usually can’t tell you what’s on the dinner menu these days, but i pretty much always know what’s for dessert🙊 #priorities

my grandma kitty’s sour cream coffee cake😍 and old recipe, but a really really good one! one of my favorite recipes my mama used to make ALL THE TIME growing up!💯

sharing the recipe below, but also added it to the blog because this one deserves a permanent place!💁🏼‍♀️
.
for the batter:
-1 cup butter, room temp
-1 cup cane sugar
-2 eggs, room temp
-1 tsp vanilla extract
-2 cups all-purpose flour
-1 tsp baking soda
-1 tsp baking powder
-1/2 tsp sea salt
-1 cup sour cream
.
for the filling/topping:
-1 cup walnuts, chopped
-1 cup pecans, chopped
-1 cup cane sugar
-1/2 cup dark brown sugar
-2 tsp cinnamon
.
preheat oven to 350F degrees. in a large mixing bowl, start with just the batter ingredients & beat together the butter & sugar until fluffy. add in the eggs & vanilla extract & mix. next mix in the flour, baking soda, baking flour, & salt. add in the sour cream & mix until everything is smooth & combined.
.
in a small bowl, add in all the filling ingredients & mix until combined. spray your 9in baking dish & pour in half the batter, half the filling, then the rest of the batter, & the rest of the filling on top. make sure to pull all batter to the edges! bake at 350 degrees for 1 hour. check after 50 min & cook until toothpick comes out pretty clean!

a super easy meal that was loved by all! i’ve learned in this season of life that cooking double so you can eat twice is a game changer! so we had taco salads one night & sheet pan nachos the next night with leftover beef💁🏼‍♀️

all you need is one bowl, about 10 minutes of your time, & you have breakfast prepped for the next few days🙌🏻 i ate this one 4 days in a row & i just made another batch on my stories this morning!🥰

such a fun family day & i’m already planning another little day trip, because we love charlottesville so much, especially during the fall🍁

we went to @chilespeachorchard & absolutely love it! it’s not as busy as carter mountain, but offers lots of the same things including apple cider donuts🍩
.
it’s also right by the little area crozet, which we love! we packed italian baguette sandwiches (but couldn’t eat them there, because of covid)! by the way, my mask is in my pocket & we were the ONLY ones in the orchard that morning so we were quite social distanced😂
.
we went & picked apples, grabbed some goodies from the shop (donuts, apple cider, & a cute little book for T) & then went and sat at picnic tables by @gritcoffee for some coffee & to eat lunch☕️ it was such a good day & the kids did great with very minimal whining which was quite the birthday gift😂
.

apple season is my favorite season!🍎 made one of my original baked oatmeal flavors: apple pie🥧
.
the original recipe is on my blog, but i made a few substitutions to make it dairy-free in case you need that too👇🏻
.
-3 cups quick oats
-1 3/4 cup cashew milk
-1/2 cup maple syrup
-1/4 cup earth balance butter
-1/4 cup unsweetened applesauce
-2 eggs
-1 tsp baking powder
-1 tsp vanilla extract
-1/2 tsp sea salt
-1-2 tsp cinnamon
-1/4 tsp nutmeg
-2 cups any kind of apples, chopped
.
i used the sweetest honeycrisp apples from my @theneighborhoodharvest delivery! still so obsessed with them & that they’re basically a local farmer’s market delivered to your door! for anyone in RVA or Hampton Roads, you can use my code RADIANCE to waive the entire one time $30 sign up fee!)💯

now back to the oatmeal👉🏻 to make it, preheat your oven to 350F degrees. melt your butter & let cool. add all the wet ingredients to a medium mixing bowl & combine. add in the dry except for the apples. then add in the apples. pour into a greased baking pan (i used an 11x7 but you can use 8x8, a pie dish, whatever you want, just adjust the baking time)! bake for 25-35 min depending on your pan size. you want the edges set & the middle set but still soft!

best to cool before slicing! i typically cut into 6-8 slices depending on my hunger level! store it in the fridge for up to 5 days or freeze individual slices in the freezer for an easy breakfast! there are also so many substitution options, i’ve included all of them on my blog! enjoy😘
