pumpkin spice iced latte🎃☕️

channeling my inner @whatrobineats with a fun coffee drink! you can make it hot or iced & here’s what you need👇🏻
.
-2 shots espresso, brewed & chilled (or 1/3 cup cold brew concentrate)
-1 cup milk (i used cashew milk)
-1 tbsp pure pumpkin purée
-1 tbsp maple syrup
-1/2 tsp pumpkin pie spice
-pinch of sea salt

brew & chill your espresso. add all the ingredients to your blender & blend! pour over ice & drink! you could also make it hot by warming it all up! enjoy!🥰

the most perfect fall inspired salad🥗

super way to throw together & great to have as an easy lunch for the week🙌🏻
.
the base is kale mixed with @naptimekitchen’s maple mustard vinaigrette (so so good & the recipe is on her blog if you just type it into her search bar!) + topped with sous vide chicken (you can cook your chicken however you like or use rotisserie) + roasted sweet potatoes (cover with olive oil & sea salt & toast 400F degrees for 30 min) + goat cheese + dried cranberries + toasted walnuts (drizzle with a little bit of olive oil & sea salt & roast in the oven for 7-10 min) 🥗

apple peanut butter pancakes🍎🥞 nothing screams pancakes more than a rainy sunday morning🌧

i’m a big fan of one giant pancake rather than little ones! it’s the perfect canvas for toppings😎
.
all i did was mix together 1/2 cup @kodiakcakes with 1/2 cup coconut milk, 1 egg, dash of cinnamon, & vanilla extract.
.
heat a skillet on medium high with @fourthandheart ghee or butter, pour in your batter, let sit for a minute & then turn the heat down to low & cover the pan. let it cook until bubbles start appearing & the first side is browned. this makes for the fluffiest, thickest pancakes! flip your pancake & cook on the other side for a couple min!👩🏼‍🍳

put it on your plate, top with chopped apple, @wild_friends creamy peanut butter (best pb for drizzling) & maple syrup🍁

crispy on the edges, gooey in the middle, THICK, & huge (you have to make them big to get that perfect consistency & texture) & you must add salt to bring out the flavor. i promise you won’t be disappointed!🙌🏻

before i become a mama, i had so many expectations

before i become a mama, i had so many expectations of how i would parent. like how i’d handle meal time, screen time, snacks, & so on. then i became a mom🙊
.
& let me just say, don’t judge another parent in general but especially before being becoming one. we have no idea what kind of day they are having or what they are dealing with like teething kids, little to no sleep, toddler tantrums, etc. or if their kid all the sudden decides to throw a fit at a store (BEEN THERE) & trust me, the mom is probably more uncomfortable than anyone else. but all that to say, i think we’re all trying to do our best in some way🙌🏻
.
so moral of my story, i do A LOT of things i said i’d never do as a parent😂 we probably have way too much screen time, T eats in front of the TV sometimes, i’ve held noah for a lot of naps, we snack on the go & often spoil our meals because of snacks, noah has spent many nights in bed with us, eat dessert before dinner, etc.😎 all i care about is that my kids feel safe & know how much i love them.
.
choose your battles friends. when i look back i don’t want to look back & remember being frustrated with T for wanting to watch TV while he ate dinner. instead, i wanna grab my plate, sit next to him & make it a date (at least sometimes)! to get on the floor, be silly, & make the most of it because at the end of the day, the years are short & i wanna soak it up❤️

made pumpkin chocolate chip muffins with my big boy on this rainy day🎃

we used @sallysbakeblog “whole wheat mini pumpkin muffins”, but made them into regular size💯

we made a mess in the kitchen, possibly measured incorrectly, ate lots of chocolate chips & it was just what our hearts needed after a week of bad colds & some challenging parenting moments! happy friday❤️

roasted broccoli & bell peppers (both covered in olive oil, sea salt, garlic powder & roasted at 375 degrees for 25-30 min) + crispy baked tofu (followed the @cookieandkate recipe & it’s fabulous & added salt, pepper, & garlic powder) + brown rice (bought a pack of frozen brown rice & all i did was warm it on the stovetop & it was perfect) + topped with @somethingnutritious maple tahini sauce (tahini, soy sauce, maple syrup, garlic powder, salt but the full recipe is on her blog under “maple tahini tofu” & it is SO GOOD!) + you could even drizzle on a little sriracha which i did a few times🙌🏻

just a little bit of the prep for an easy lunch & also super versatile depending on what you choose to top it with💯 but really so easy because i baked the veggies & tofu at the same time, warmed the rice while they were baking, & then let everything cool and put it into containers to have ready to throw in a bowl for lunch! also, was never a tofu person until this recipe, it always intimidated me but now i loveee how crispy and perfect it gets😍 happy thursday!

lunch most days looks like this🍳 i’m either eating eggs in some form, a snack plate, or leftovers if we have them!💁🏼‍♀️

this plate is filled with👉🏻 2 fried eggs in ghee + sea salt + an incredibly doughy, dense english muffin with avocado + microgreens💯
.
i honestly don’t remember what i did before this combo & that’s fine with me😎 i typically rotate through a lot of the same things for meals & there’s nothing wrong with that in my opinion. variety is good & helps us not get bored but sometimes just changing or adding a few different things to the same meal can spice it up!🙌🏻
.
i’m all about less decisions in my life right now because caring for little ones takes a lot of my brain capacity😜 so a lot of my meals look the same, but my creativity & fun comes in my baked goods. i usually can’t tell you what’s on the dinner menu these days, but i pretty much always know what’s for dessert🙊 #priorities
