soft chocolate cookies (that totally stand on their own, but the frosting is insane!) loaded with a THICK peanut butter frosting & they are fantastic! trust me on this one, you need them in your life this weekend💃🏼

they’re super easy to make! filled with oats, coconut, dates, peanut butter, maple syrup & dipped in a chocolate coating🍫 can work as a snack or dessert, you decide😎

BLUEBERRY MUFFIN BAKED OATMEAL🫐 it’s bright, fresh & tastes like an actual muffin👌🏻

comes together in one bowl & can be made both gluten & dairy free for those who need it! perfect for an easy make ahead breakfast that the whole family will love😘
.
the recipe, notes & substitutions are all posted on my blog but sharing the recipe here as well!❤️

-3 cups rolled oats
-1 3/4 cup whole milk
-1/2 cup maple syrup
-1/3 cup butter, melted & cooled
-2 large eggs
-2 tsp vanilla extract
-1 tsp cinnamon
-1 tsp baking powder
-1 tsp lemon zest
-1/4 tsp sea salt
-1 1/2 cups blueberries, fresh or frozen
.
to make, preheat your oven to 350F degrees. in a large mixing, whisk together the eggs & then add in the maple syrup & milk & mix well. next, pour in the melted and cooled butter & vanilla extract. add in the oats, cinnamon, baking powder, lemon zest, sea salt, & blueberries. mix until everything is incorporated.

spray or coat a 9x9 baking pan with oil or butter. pour in the mixture & sprinkle a blueberries on top. bake for 35-45 minutes. you want the middle to be set but still soft. remove & let cool completely before slicing or serve warm! cut into 6-9 squares depending on your hunger. top with your favorite toppings & enjoy! happy wednesday🥰

one of my favorite go to’s for an easy breakfast that’s on my blog! here’s the recipe again below👇🏻

1/2 cup rolled oats
1/2 cup cashew milk
1 scoop collagen or protein powder
1 tbsp ground flaxseeds or chia seeds
1 tbsp maple syrup
1 tbsp cashew butter
1/4 tsp vanilla extract
pinch of sea salt
.
pour everything in a jar, shake it up, & store it in the fridge overnight! top with whatever you like: i did banana, more cashew butter & chocolate chips🍫

if you’ve been following for awhile, you know i absolutely baked oatmeal! it makes for the easiest prep ahead breakfast & it’s literally like eating dessert🙌🏻 fills me up, makes me feel good, & usually kid approved too which is always a plus💯

made a batch of @ghirardelli brownies, cut them into triangles, drizzled with melted chocolate, & sprinkled with festive sprinkles! easiest dessert ever & so cute🙌🏻

let’s talk about the best way to upgrade your boxed brownies while we’re at it👉🏻 substitute strongly brewed coffee for water to bring out the richness of the chocolate (it won’t taste like coffee), add 1 tsp vanilla extract, sprinkle with flakey sea salt out of the oven!😎

the cookies are soft & dense and loaded with gingerbread flavor & the cinnamon in the cream cheese frosting really brings it up a notch! i do have to say i love all things gingerbread, so if you do too, you must try these💁🏼‍♀️

WHY I BAKE🧁 it was this time last year that my love for baking really began. i just started & now i can’t stop. it’s therapeutic to me & a lot of why i bake is for these two👆🏻
.
so they can grow up in a home where eating a cookie brings them joy & not guilt. where they don’t see themselves as a good or bad person because of what they eat, because food shouldn’t define us.
.
i want them to grow up in a home where mommy & daddy eat the treats too instead of being on some kind of diet. where food is joy, togetherness, & bonding. i feel like a bad relationship with food can be more harmful than the actual food. i say that, because i’ve been there.
.
so i hope if you ever come to my house, that there will be freshly baked cookies waiting for you🍪

i take some vanilla ice cream (which i always have in the freezer) & crumble up some of my cookie dough😍 i freeze ALL my cookies in individual dough balls so that they’re accessible anytime! so you can imagine how many i have in there🙈
.
this combo is vanilla bean ice cream topped with my “best salted chocolate chip cookies” (subbed the chocolate chips for christmas m&m’s) & then sprinkles with a few more m&m’s🎄
.
it’s absolutely dreamy! i might just need to make it tonight🙃 have a great thursday!❤️
